Grilled Vegetable Sandwich

  1. Brush onions and zucchini with oil.
  2. Grill on medium heat 6 to 7 min.
  3. or until crisp-tender, turning occasionally.
  4. Place in large bowl.
  5. Add roasted peppers, salt and black pepper; mix lightly.
  6. For each serving: Spread each of 2 bread slices with 1/2 Tbsp.
  7. (7 mL) mayonnaise.
  8. Top 1 bread slice with 1 cheese slice, 1/4 cup (60 mL) grilled vegetables, second cheese slice, 1 tomato slice, additional 1/4 cup (60 mL) grilled vegetables and remaining bread slice.
  9. Grill on medium heat 1 to 2 min.
  10. on each side or until sandwich is golden brown on both sides and cheese is melted.
