Grilled Vegetable Sandwich
- 6-1/4 cups red onions, sliced
- 6-1/4 cups zucchini, sliced
- 1-1/2 cups olive oil
- 6-1/4 cups canned roasted red peppers, drained, cut into strips
- 1 Tbsp. salt
- 2 tsp. black pepper
- 1-1/2 cups Kraft Mayo Real Mayonnaise
- 50 slices sourdough bread, sliced
- 50 each Casino Swiss Slices
- 5 each large tomatoes, each cut into 5 slices King Sooper's 1 lb For $0.99 thru 02/09
- Brush onions and zucchini with oil.
- Grill on medium heat 6 to 7 min.
- or until crisp-tender, turning occasionally.
- Place in large bowl.
- Add roasted peppers, salt and black pepper; mix lightly.
- For each serving: Spread each of 2 bread slices with 1/2 Tbsp.
- (7 mL) mayonnaise.
- Top 1 bread slice with 1 cheese slice, 1/4 cup (60 mL) grilled vegetables, second cheese slice, 1 tomato slice, additional 1/4 cup (60 mL) grilled vegetables and remaining bread slice.
- Grill on medium heat 1 to 2 min.
- on each side or until sandwich is golden brown on both sides and cheese is melted.
