Caramel Muesli Slice Recipe

  1. Grease a 20cm X 30cm rectangular slice pan.
  2. Place a strip of baking paper to cover the base of the pan and to extend over two opposite sides.
  3. Combine muesli, All-Bran, minced peanuts and saltanas in a bowl and mix well.
  4. In a medium pan combine butter, lowfat milk, sugar and syrup.
  5. Bring to the boil and stir constantly for 10 min or possibly till the mix thickens and turns a deep caramel colour.
  6. Pour caramel quickly into muesli mix and mix well.
  7. Press mix into prepared pan and smooth the top with a wet spatula.
  8. Sprinkle the top with crushed nuts and press down firmly.
  9. Cover and chill for several hrs or possibly overnight.
  10. Serve with afternoon tea.
