Grilled Portabella Chevre and Arugula Sandwiches

  1. Mix olive oil with crushed garlic until smooth.
  2. Brush mushrooms and red onion w ith olive oil mix.
  3. Grill on both sides until done - about 5 minutes per side.
  4. S alt andamp; pepper to taste.
  5. Grill bread on both sides.
  6. Spread one piece with mayo an d the other with chevre.
  7. Fill with mushroom, onion slices and arugula.
  8. Serves 2.
