Chicken & Rice Cacciatore
- 3 slices OSCAR MAYER Bacon, coarsely chopped Rite Aid 2 For $7.00 thru 02/06
- 1 lb. fresh mushrooms, quartered
- 1 small onion, chopped (about 3/4 cup) King Sooper's 1 lb For $0.99 thru 02/09
- 6 small boneless skinless chicken breasts (1-1/2 lb.), cut crosswise in half
- 2 Tbsp. flour
- 1/3 cup KRAFT Balsamic Vinaigrette Dressing
- 1 can (14-1/2 oz.) diced tomatoes with garlic and olive oil, undrained
- 2 bay leaves
- 3 cups hot cooked long-grain brown rice
- 2 Tbsp. chopped fresh parsley
- Cook and stir bacon in large skillet on medium-high heat 2 min.
- Add mushrooms and onions; cook 10 min., stirring occasionally.
- Remove from skillet; set aside.
- Add chicken to skillet; cook 2 to 3 min.
- on each side or until browned on both sides.
- Mix flour and dressing; pour over chicken.
- Stir in tomatoes and bay leaves.
- Bring to boil; simmer on medium heat 10 min., stirring occasionally.
- Stir in mushroom mixture; simmer 5 min., stirring occasionally.
- Remove and discard bay leaves.
- Serve chicken and sauce over rice; sprinkle with parsley.
