Vegetable Relish/Ceviche

  1. Take the corn kernals off of the cob (or thawed frozen sweet corn) and put in a pan on medium high heat add 1 tablespoon olive oil and saute corn with minced garlic till slightly browned.
  2. Drain and rinse black beans.
  3. Zest and squeeze limes.
  4. Medium dice celery, tomatoes, jalapenos, red onion and bell peppers.
  5. Large dice pineapple and mangos.
  6. Chop cilantro.
  7. In large bowl add diced and chopped items, pour lime juice and zest over veggies, mix and then add fruit.
  8. Add black beans, corn and lightly toss.
  9. Salt to taste.
