Tilapia with Strawberry Salsa
- 1- 1/2 Tablespoon Chili Powder
- 1/2 teaspoons Kosher Salt
- 6 dashes Fresh Ground Black Pepper
- 2 Tablespoons Ground Cumin
- 1/4 teaspoons Cayenne Pepper
- 2 Tablespoons Olive Oil
- 2 cloves Garlic, Pressed
- 6 whole Tilapia Fillets, About 4 Oz. Each
- 1 whole Lime, Juiced
- 16 ounces, weight Fresh Strawberries, Hulled, Diced Small
- 1 whole Green Pepper, Seeded, Diced Small
- 2 whole Jalapeno Peppers, Seeded, Diced Small
- 1 whole Small Red Onion, Diced
- 1 pinch Kosher Salt
- 3 dashes Fresh Ground Black Pepper
- 1 whole Lime, Juiced
- 1/2 cups Fresh Cilantro, Snipped
- Mix together all ingredients for the salsa in a large bowl (make sure to dice everything small)!
- Refrigerate until ready to use.
- For the fish: In a small bowl, mix together the chili powder, salt, black pepper, cumin and cayenne.
- Set aside.
- In a large skillet or grill pan over medium-high heat, heat olive oil.
- Once hot add pressed garlic and saute for about 2 minutes.
- Lay fish in pan and sprinkle with half of the seasoning.
- Cook about 4-5 minutes.
- Flip fish over and sprinkle with remaining seasoning and drizzle with lime juice.
- Cook an additional 4-5 minutes, until fish is fully cooked and flakes with a fork.
- Serve immediately with strawberry salsa.
- I like to pair this with my cilantro-lime rice.
