Tilapia with Strawberry Salsa

  1. Mix together all ingredients for the salsa in a large bowl (make sure to dice everything small)!
  2. Refrigerate until ready to use.
  3. For the fish: In a small bowl, mix together the chili powder, salt, black pepper, cumin and cayenne.
  4. Set aside.
  5. In a large skillet or grill pan over medium-high heat, heat olive oil.
  6. Once hot add pressed garlic and saute for about 2 minutes.
  7. Lay fish in pan and sprinkle with half of the seasoning.
  8. Cook about 4-5 minutes.
  9. Flip fish over and sprinkle with remaining seasoning and drizzle with lime juice.
  10. Cook an additional 4-5 minutes, until fish is fully cooked and flakes with a fork.
  11. Serve immediately with strawberry salsa.
  12. I like to pair this with my cilantro-lime rice.
  13. Enjoy!
