Feta & Olive Pasta Salad
- 2 Tbsp. extra virgin olive oil
- 1 Tbsp. balsamic vinegar
- 6 oz. ATHENOS Crumbled Reduced Fat Feta Cheese
- 1/4 cup chopped green onion
- 10 large black olives, chopped
- 20 cherry tomatoes, sliced in half
- 6 oz. rotini pasta, uncooked
- 3 cups baby carrots Target 2 lb For $3.00 thru 02/06
- 4 kiwis, peeled and sliced
- 4 On-the-Go packets
- 4 bottles of water, 20 fl oz
- Mix oil, vinegar, and feta cheese in a small bowl.
- Add chopped onions, olives and tomatoes; set aside.
- Cook pasta according to package instructions.
- Drain but do not rinse.
- Toss hot pasta with olive oil-cheese sauce.
- Divide into 4 equal servings.
- Complement each meal with 1/4 each of the baby carrots and sliced kiwis.
- COMBINE CRYSTAL LIGHT On-the-GO packet with bottled water per package directions.
- Serve each person 1 water bottle with their meal.
