Carol's Chicken 'n Vegetable Soup

  1. In a lg saucepan over high heat, bring broth to a boil.
  2. Add rice, cover, reduce heat and simmer for 10 minutes.
  3. Add carrots, zucchini and celery and simmer, covered, for 10 minutes.
  4. In a sm saucepan over medium heat melt the butter.
  5. Stir in the flour and cook until bubbly.
  6. Remove from heat and gradually add milk, then stir in 1 cup of broth from soup mixture.
  7. Return to heat and cook until sauce is thick and bubbly.
  8. Stir sauce into soup mixture, add chicken and spices.
  9. Enjoy!
