Carol's Chicken 'n Vegetable Soup
- 6 cup chicken broth
- 3 medium carrots, chopped
- 2 sm. zucchini, chopped
- 6 tbsp flour
- 1/2 can green onion, chopped
- 1/2 cup uncooked rice
- 6 tbsp butter
- 2 cup milk
- 2 cup chopped, cooked chicken
- 1 salt, pepper and parsley to taste
- 3 stalks celery, chopped
- In a lg saucepan over high heat, bring broth to a boil.
- Add rice, cover, reduce heat and simmer for 10 minutes.
- Add carrots, zucchini and celery and simmer, covered, for 10 minutes.
- In a sm saucepan over medium heat melt the butter.
- Stir in the flour and cook until bubbly.
- Remove from heat and gradually add milk, then stir in 1 cup of broth from soup mixture.
- Return to heat and cook until sauce is thick and bubbly.
- Stir sauce into soup mixture, add chicken and spices.
- Enjoy!
