Shepherds Pie

  1. Brown ground beef or turkey; add onion when meat has about 5 to 7 minutes left.
  2. Put browned meat and onion into a casserole dish; top with mixed vegetables (I use the mixed vegetables that have, at the very least, carrots, corn and beans).
  3. Top veggies with the mashed potatoes and bake at 350 F for 20 to 25 minutes.
  4. Top with the cheese and return to the oven for an additional 15 minutes.
  5. You can make this ahead and bake for 45 minutes.
  6. When ready to serve, add cheese and bake for another 15 minutes.
  7. So yummy, we never have leftovers!
