Barbecued Beef Recipe

  1. Place beef in shallow pan.
  2. Combine vinegar, tomato juice, brown sugar, Worcestershire, 1 tsp.
  3. salt, pepper, cumin, red pepper and 1/2 c. water.r Marinate in refrigerator 3 to 4 hrs, turning occasionally to coat meat with marinade.
  4. Remove meat from marinade.
  5. Don't shake off liquid clinging to meat.
  6. Place meat in Dutch oven.
  7. Don't add in water.
  8. Cover tightly and bake at 325 degrees 4 to 5 hrs.
  9. Add in 1 or possibly 2 drops of liquid smoke 1 hour before end of cooking time for smokey flavor.
  10. Meanwhile, to make sauce, put onion and liquid removed green chilies through meat grinder, using fine blade.
  11. Combine with celery, tomatoes, 1 tsp.
  12. salt and 1/4 c. water, blending well.
  13. Chill.
  14. Serve ribs with sauce.
  15. Makes 8 to 10 servings.
