Sunset Ember
- 4 ounces rum (aged rum such as Cruzan Single Barrel Estate)
- 1 ounce fresh lemon juice
- 12 ounce simple syrup
- 12 ounce grenadine
- 2 egg whites
- maraschino cherry, for garnish
- 1 12 cups pomegrante juice
- 34 cup pure unbleached cane sugar
- For Grenadine: Bring juice and sugar to a boil in a medium saucepan.
- Reduce heat and simmer to thicken slightly.
- let cool.
- Grendine will keep, covered and refrigerated, for up to 1 month.
- For Cocktail: In a cocktail shaker, combine rum, juice, simple syrup,grenadine, and egg whites; shake well.
- Strain into 2 chilled cocktail glasses.
- Garnish each with a cherry.
