Spinach Salad With Zesty Blue Cheese Dressing

  1. Whisk together first four ingredients; gradually whisk in oil.
  2. Add blue cheese; stir gently.
  3. Combine spinach and next three ingredients.
  4. Drizzle with dressing, tossing to coat.
  5. Sprinkle with Creole Croutons or your choice of croutons.
  6. Make Creole Croutons by combining 5 slices of 1" thick french bread (cubed), 1/4 cup parmesan cheese, 1/4 cup melted butter and 1/2 Tbs.
  7. creole seasoning in a plastic bag.
  8. Arrange in an even layer on foil-lined baking sheet.
  9. Bake at 300 for 30 minutes.
