Sig's Potato Leftover Breakfast

  1. Heat the butter or ghee.
  2. Cut your potatoes into bite sized pieces so that they don't fall apart in slowly frying them
  3. When they are nearly done add the garlic, finely chopped pepper and finely chopped spring onions make sure to add some of the green too.
  4. Soften the just added ingredients a little, as to your liking and then add all the spices .
  5. Cook until everything is done to the way you prefer and the potato skins have taken on a slight crisp.
  6. In the meantime make the sauce .Add the butter into a pan and melt , then add the flour and stir until it forms a little ball .
  7. This is to cook of the flavour of the flour.
  8. Then add the milk stirring all the time and the crumbled seasoning.
  9. Add the mustard and thin the sauce with a little water at the time stirring all the time until it has the thickness you require.
  10. To flavour or garnish the sauce even more you can add fried bacon bits or another spoon of butter .
  11. This sauce is particularly good with fried potatoes , eggs, cold meats and fish .
