Tortilla Pie With Chorizo
- 2 tablespoons lard or 2 tablespoons vegetable oil
- 1 14 lbs ground pork
- 3 garlic cloves, crushed
- 2 teaspoons dried oregano
- 1 teaspoon cinnamon
- 12 teaspoon ground cloves
- 12 teaspoon black pepper
- 2 tablespoons dry sherry
- 1 teaspoon caster sugar
- 1 teaspoon salt
- 12 corn tortillas
- oil (for frying)
- 3 cups mexican cheese
- 1 14 cups creme fraiche
- 2 cups canned tomatillos, drained
- 4 tablespoons water
- 2 serano chilies, seeded and chopped
- 2 garlic cloves
- 1 bunch cilantro
- 12 cup sour cream
- preheat oven to 350F,heat lard in a large sauce pan,add pork and crushed garlic,stir over medium heat until meat is browned.stir in oregano,cinnamon,cloves and pepper,cook for 3 min,stir constantly,then add sherry,sugar and salt,stir for another 3 min.remove from the heat.
- cut the tortilla into 3/4 inch strips,heat oil in a frying pan and fry the tortilla strips until crispy and golden brown.
- spread half of the pork mixture in a baking dish,top with half of the tortilla strips and cheese,add dollops of creme fraiche,repeat the layers,bake for 20-25 min or until bubbling.
- meanwhile,make the tomatillo sauce:put all ingredients except sour cream in a blender,process until smooth,pour into a sauce pan and bring to a boil,then lower the heat and simmer for 5 minute.
- stir the sour cream into sauce,season with salt and pepper,pour the mixture on top and sprinkle with cilantro,serve immediately.
