Tortilla Pie With Chorizo

  1. preheat oven to 350F,heat lard in a large sauce pan,add pork and crushed garlic,stir over medium heat until meat is browned.stir in oregano,cinnamon,cloves and pepper,cook for 3 min,stir constantly,then add sherry,sugar and salt,stir for another 3 min.remove from the heat.
  2. cut the tortilla into 3/4 inch strips,heat oil in a frying pan and fry the tortilla strips until crispy and golden brown.
  3. spread half of the pork mixture in a baking dish,top with half of the tortilla strips and cheese,add dollops of creme fraiche,repeat the layers,bake for 20-25 min or until bubbling.
  4. meanwhile,make the tomatillo sauce:put all ingredients except sour cream in a blender,process until smooth,pour into a sauce pan and bring to a boil,then lower the heat and simmer for 5 minute.
  5. stir the sour cream into sauce,season with salt and pepper,pour the mixture on top and sprinkle with cilantro,serve immediately.
