Lasagna Verde

  1. Cook lasagna noodles according to package directions.
  2. Combine ricotta cheese, spinach, eggs, and red pepper.
  3. Season to taste.
  4. Melt butter in saucepan over medium heat; cook onion and garlic 2 to 3 minutes.
  5. Stir in flour, then milk.
  6. Cook and stir until bubbling and thickened.
  7. Stir in 1/2 of the Parmesan cheese.
  8. Pour 1/2 cup sauce over bottom of greased 13x9x2-inch baking pan.
  9. Top with 1 layer of 4 lasagna noodles, overlapping edges slightly.
  10. Layer with 1/2 spinach mixture, and 1/2 of the mozzarella cheese.
  11. Repeat layers.
  12. Top with last 4 noodles.
  13. Pour remaining sauce evenly over lasagna; sprinkle with remaining Parmesan cheese.
  14. Bake in 350F oven for 35 minutes.
  15. Let stand 10 minutes before serving.
