Lasagna Verde
- 12 spinach-flavoured lasagna noodles
- 1 pkg. (454 g) ricotta cheese, regular or light
- 1 pkg. (300 g) frozen chopped spinach, thawed and drained
- 2 eggs
- 1/2 cup chopped red pepper
- 1/4 cup butter
- 1 small onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 clove garlic, minced
- 1/4 cup all purpose flour
- 2 cups milk
- 1/2 cup Kraft 100% Parmesan Grated Cheese, divided
- 2 cups Cracker Barrel Shredded Part Skim Mozzarella Cheese
- Cook lasagna noodles according to package directions.
- Combine ricotta cheese, spinach, eggs, and red pepper.
- Season to taste.
- Melt butter in saucepan over medium heat; cook onion and garlic 2 to 3 minutes.
- Stir in flour, then milk.
- Cook and stir until bubbling and thickened.
- Stir in 1/2 of the Parmesan cheese.
- Pour 1/2 cup sauce over bottom of greased 13x9x2-inch baking pan.
- Top with 1 layer of 4 lasagna noodles, overlapping edges slightly.
- Layer with 1/2 spinach mixture, and 1/2 of the mozzarella cheese.
- Repeat layers.
- Top with last 4 noodles.
- Pour remaining sauce evenly over lasagna; sprinkle with remaining Parmesan cheese.
- Bake in 350F oven for 35 minutes.
- Let stand 10 minutes before serving.
