Steamed Cod with Ginger

  1. Preheat oven to 375F.
  2. In a shallow nonreactive 2-quart baking dish, stir together scallion whites, ginger, vinegar, oil, red-pepper flakes, and sugar.
  3. Season with salt.
  4. Add cod and let marinate at room temperature 20 minutes, turning once.
  5. Cover tightly with parchment, then foil.
  6. Transfer to oven and cook until fish is opaque throughout, 30 to 35 minutes.
  7. Remove from oven, garnish with scallion greens, and serve.
