Caramel Chilli Pork with Rice

  1. Heat the oil in a large frying pan over a high heat.
  2. Add the pork and cook 3-4 minutes until browned.
  3. Place on a lined baking tray and cook at 180C for 8-10 minutes until just cooked.
  4. Cover and rest 5 minutes before slicing into thick pieces.
  5. Combine 1/4 cup of the water with the sugar in a small saucepan.
  6. Heat to dissolve the sugar.
  7. Bring to boil and boil, without stirring until sugar syrup is golden brown.
  8. Reduce heat to simmer and add remaining water, dressing & fish sauce.
  9. Heat until reduced to about 1/2 cup.
  10. Add onions to frying pan and cook until soft.
  11. Add caramel syrup, sambal oelek and five spice to frying pan and stir until combined.
  12. Add pork and snow peas to pan and heat through.
  13. Serve immediately with rice and garnish with spring onions.
