Zucchini with Lemon-Basil Dressing

  1. Combine lemon juice, lemon peel and mustard in bowl; gradually whisk in oil.
  2. Stir in basil and onion.
  3. Season with salt and pepper.
  4. Let stand at least 1 hour and up to 6 hours, stirring occasionally.
  5. Steam zucchini until just crisp-tender, about 5 minutes.
  6. Transfer to large bowl; cool completely.
  7. Add dressing and toss to coat.
  8. Let stand 1 hour for flavors to develop, stirring often.
