Loaded rice skillet

  1. Heat oil in skillet, add zucchini bell pepper and onion cook for 5 minutes then add remaining ingridients except rice and cheese.
  2. Let come to a boil and add the rice.
  3. Stir and cover for 7 minutes or until liquid is absorbed and top with cheese.
