Loaded rice skillet
- 1 tbsp oil
- 1 1/2 cup zuccini cut in squares
- 1/2 diced onion
- 1/2 green bell pepper diced
- 1 can rotell with liquid
- 1 can black beans
- 1/2 can corn
- 3/4 cup water
- 1 pinch ground cumin
- 1 cup minute rice
- to taste salt and pepper
- Heat oil in skillet, add zucchini bell pepper and onion cook for 5 minutes then add remaining ingridients except rice and cheese.
- Let come to a boil and add the rice.
- Stir and cover for 7 minutes or until liquid is absorbed and top with cheese.
