Parmesan Chicken Strips with Mustard Mayonnaise
- 40g RITZ* Crackers
- 1/4 cup KRAFT* Grated Parmesan Cheese
- 1/4 cup dry breadcrumbs
- salt and pepper, to taste
- 500g skinless chicken breasts, cut into 1cm strips
- 1 egg white, lightly beaten
- oil for shallow frying
- 1/3 cup KRAFT Classic Mayonnaise
- 1 tablespoon seeded mustard
- 1 tablespoon honey
- Combine crackers, parmesan, breadcrumbs, salt and pepper in a food processor until crackers are finely crushed.
- Dip the chicken in the egg whites, then in the cracker mixture.
- Refrigerate until firm.
- Shallow fry for 5 minutes each side or until cooked through.
- Serve with combined mayonnaise, mustard and honey.
