Parmesan Chicken Strips with Mustard Mayonnaise

  1. Combine crackers, parmesan, breadcrumbs, salt and pepper in a food processor until crackers are finely crushed.
  2. Dip the chicken in the egg whites, then in the cracker mixture.
  3. Refrigerate until firm.
  4. Shallow fry for 5 minutes each side or until cooked through.
  5. Serve with combined mayonnaise, mustard and honey.
