Sugared Lime and Mango Cheeks
- 2 mangoes (firm ripe mango works best)
- 1 tablespoon grated lime rind
- 1 tablespoon lime juice
- 4 teaspoons brown sugar
- Slice the cheeks from the two mangos.
- To do this you cut from top to bottom of the mango, feeling for the seed and slicing around it.
- Remove the cheeks as close to the seed as possible.
- Leave the skin on.
- Lay the mango cheeks, skin side down onto a large plate.
- Drizzle over the lime juice, graed lime rind and then sprinkle over the brown sugar.
- Cook on a grill, flesh side down, until lightly browned.
