Bombay Tikkis
- 1 cup mashed potatoes Safeway 2 pkg For $5.00 thru 02/09
- 1/4 cup Kraft Crunchy Peanut Butter
- 1/4 cup finely chopped red onions
- 1/4 cup lemon juice Safeway 4 ct For $5.00 thru 02/09
- 2 green chiles, sliced
- 2 slices white bread, cut into small squares
- 2 Tbsp. chopped fresh coriander (cilantro)
- 2 Tbsp. chopped fresh mint
- 1 tsp. garam masala
- 1 tsp. dried fenugreek leaves
- 1/2 tsp. cumin seed
- 1/2 tsp. red chili powder or cayenne pepper
- Combine ingredients.
- Shape into 8 balls, using about 1/4 cup for each; flatten slightly.
- Add 4 tikkis to skillet sprayed with cooking spray; cook 10 min.
- or until crisp and golden brown on both sides, carefully turning after 5 min.
- Repeat with remaining tikkis.
