Mini Peaches and Cream Pies

  1. Preheat oven to 300 degrees.
  2. Beat cream cheese, egg and 1 Tablespoon sugar in a large bowl until smooth, 2-3 minutes.
  3. Divide cream cheese mixture among crusts.
  4. Place pies on a baking sheet.
  5. Bake pies until filling is almost set, but still slightly jiggly, about 12 minutes.
  6. Remove from heat.
  7. Drain sliced peaches, reserving 1 Tablespoon liquid.
  8. Top each pie with 2 or 3 peach slices.
  9. Combine reserved peach liquid and remaining sugar in a small bowl.
  10. Drizzle over each pie.
  11. Serve warm.
