Smoked Salmon Quesadillas

  1. In a bowl, combine chopped salmon, parmesan cheese, mayo and pepper.
  2. Mix well.
  3. Heat a teflon frying pan on medium heat.
  4. Spread half the mixture on the tortilla in a thin layer.
  5. Top with mozzarella cheese, and top with another tortilla.
  6. Once tortilla starts to brown, flip and heat the other side.
  7. Once bottom tortill is brown, remove from heat and let cool on cutting board.
  8. After 2 minutes, cut with a pizza wheel and serve.
