Italian Baked Chicken & Pasta

  1. Start by cooking the pasta until just tender, about 5 minutes.
  2. Meanwhile, saute the chicken in the olive oil for a few minutes.
  3. Add the onions and garlic, stirring to combine, and cook until the onions are soft and the chicken is cooked through, about 5 minutes more.
  4. Add the canned tomatoes, 1/2 cup of the mozzarella cheese, Italian seasoning, sprinkle of salt, pepper & garlic powder.
  5. Stir to combine.
  6. Place the mixture in a buttered baking dish.
  7. Top with remaining mozzarella cheese.
  8. In a small bowl mix together the bread crumbs and the Parmesan cheese.
  9. Sprinkle over the top of the pasta mixture.
  10. Dot the top with small bits of butter.
  11. Bake @ 400 degrees until the top is golden brown, about 20 minutes.
  12. Notes: This is also delicious with Italian Sausage (in place or combined with the chicken)
