Susans Caldo Soup

  1. Cut the sausage into 1/4-inch slices.
  2. Melt the butter over medium heat in a large saucepan; add the onion and sausage, and saute until the onion is transparent, about 10 minutes.
  3. Add the chicken broth, potatoes, and House Seasoning.
  4. Bring to a boil, reduce the heat, cover, and cook for 10 minutes.
  5. Add the collard greens, cover, and cook for 20 minutes longer.
  6. Before serving, using a fork, mash some of the potatoes to thicken the soup.
