Coconut lime chicken

  1. Add Marinade ingredients in bowl.
  2. Oil, lime zest, spices, aminos or soy sauce, salt sugar and coconut milk.
  3. Cut chicken as if you were butterfling it.
  4. Then cut in half.
  5. Put in gallon size zip bag.
  6. Then pound them to same thickness.
  7. Pour marinade in zip bag with chicken.
  8. Squeeze air out of bag.
  9. Let sit for 30 mins to 2 hours.
  10. Get you grill ready or you can use a grill pan.
  11. The grill marks look so good.
  12. Place chicken on the grill.. try not to move chicken around to much.
  13. Let it chill for a few mins.
  14. While chicken is cooking pour marinade in a small pot.
  15. Cook to a boil for at least 3 min.
  16. This makes it safe to eat.
  17. Serve with rice or quinoa!
  18. Cut you lime in to wedges.. squeeze juice on chicken.
  19. Sprinkle with cilantro and your serrano or jalaneno pepper.
