Breaded and Baked Tomatoes
- 1/4 cups Breadcrumbs
- 1/4 cups Panko Breadcrumbs
- 1/4 cups Gruyere, Shredded
- 1 clove Garlic, Minced
- 1/2 teaspoons Soy Sauce
- 1/2 teaspoons Balsamic Vinegar
- 4 teaspoons Olive Oil, Divided
- Salt And Pepper, to taste
- 1 whole Tomato, Large
- Preheat oven to 350 degrees F. Combine breadcrumbs, panko, Gruyere and garlic in bowl.
- In a separate bowl combine soy sauce, balsamic and 1 teaspoon olive oil.
- Slice tomatoes 1/4-1/2 inch thick.
- Brush soy sauce mix over tomatoes, season with salt and pepper and dip into the bread crumb mix on both sides.
- Grease baking sheet with cooking spray or oil and place tomatoes in single layer.
- Bake 15-20 minutes then broil for a few minutes, until lightly browned.
