Quick Turkey Chowder
- 1 1/2 c. cut up cooked turkey
- 1/2 c. chopped celery
- 1/2 c. chopped onion
- 1/4 c. margarine or butter
- 2 Tbsp. all-purpose flour
- 2 c. chicken broth
- 2 c. milk
- 1/8 tsp. pepper
- 1 (16 oz.) can tiny whole potatoes, diced
- 1 (16 oz.) can cream-style corn
- 1 (10 oz.) pkg. frozen green peas, thawed
- 1/4 c. chopped pimentos
- chopped parsley
- Cook celery and onion in margarine in large saucepan until tender.
- Remove from heat; blend in flour.
- Cook over low heat, stirring until mixture is bubbly.
- Slowly stir in broth and milk. Heat to boiling, stirring constantly.
- Boil and stir for 1 minute. Stir in turkey, corn, potatoes, peas, pimento and pepper; heat through.
- Garnish with parsley.
- Makes 4 servings.
