Black Duck With Wine Recipe
- 2 lrg Black ducks
- 3 Tbsp. Butter Salt to taste Freshly-grnd black pepper to taste
- 1/2 tsp Thyme
- 1/2 tsp Basil
- 3 x White onions minced
- 1/4 c. Minced fresh parsley Duck hearts minced
- 12 ounce White wine warmed
- 1 c. Heavy cream
- Pintail ducks may be used in place of Black ducks.
- Cut ducks into serving pcs.
- Roll in flour and brown in butter and oil, turning often.
- Sprinkle with salt and pepper and add in thyme, basil, onion, parsley, giblets and wine.
- Cover and cook in 350 degree oven for 1 hour.
- Add in cream and cook for 20 more min or possibly till duck pcs are tender.
- Serve in a hot platter with the gravy from the pan.
- Suggested accompaniments; warm bread, red wine, buttered baby carrots and braised celery.
- This recipe yields 4 servings.
