aguadito de pollo. (Peruvian chicken soup)
- 1 salt and pepper to taste
- 1/2 cup olive oil
- 1 tsp minced garlic
- 1 medium onion, chopped
- 1 tbsp seeded, minced serrano chilli
- 1/2 cup chopped cilantro
- 1 cup green peas
- 1 cup corn
- 1/2 chopped bell pepper
- 10 cup chicken broth
- 4 yukon gold potatoes, cut in half
- 4 bonless skinless chicken breasts or 6 thighs, cut in half
- 1 cup uncooked white rice
- Lightly season the chicken with salt and pepper.
- Heat oil in a heavy pot (or dutchoven) over medium-high heat.
- saute onions, garlic and Serrano chillies until softened, 1-2 min, then add the chicken and brown lightly, 4-5 min.
- add peas, corn, cilantro bell pepper, potatoes, rice and chicken broth.
- Bring to a boil, reduce heat and simmer until the chicken is cooked and the potatoes and rice are done, 30-40 min.
