Specialite De Le Maison Fruit Loaf
- 2 cups flour
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 2 teaspoons mixed spice
- 12 teaspoon salt
- 1 tablespoon sugar
- 125 g currants
- 125 g sultanas
- 125 g mixed peel
- 2 eggs
- 1 tablespoon butter, melted
- 12-1 cup milk or 12-1 cup water
- Sift dry ingredients together.
- Pour hot water on the dried fruit, then drain.
- Add the mixed peel.
- I also add glace cherries, if available.
- Beat together eggs, melted butter and milk or water.
- Add the liquids with fruit to the dry ingredients.
- Bake at 170 degrees C for 1 hour, then in a cooler oven for 1/2 hour.
