Classic Sugar Cookies

  1. Preheat oven to 350 degrees.
  2. In a large bow, cream sugar, butter, and salt.
  3. Beat in egg, lemon rind, and vanilla until light and fluffy.
  4. Sift together flour and baking powder. Gradually stir into creamed mixture.
  5. On floured board, using floured rolling pin, roll dough until 1/8 in thick.
  6. Cut into fancy shapes.
  7. Place on ungreased baking sheets.
  8. Sprinkle with additional sugar.
  9. Bake 9 to 12 minutes or until lightly browned around the edge.
  10. Cool on racks.
  11. Store in airtight containers. Makes about 5 to 7 dozen cookies.
