Classic Sugar Cookies
- 1 c. sugar
- 3/4 c. butter or margarine, softened
- 1/2 tsp. salt
- 1 egg
- 1 tsp. grated lemon rind
- 1 tsp. vanilla extract
- 2 1/4 c. all-purpose flour
- 1 tsp. baking powder
- additional sugar for top of cookies
- Preheat oven to 350 degrees.
- In a large bow, cream sugar, butter, and salt.
- Beat in egg, lemon rind, and vanilla until light and fluffy.
- Sift together flour and baking powder. Gradually stir into creamed mixture.
- On floured board, using floured rolling pin, roll dough until 1/8 in thick.
- Cut into fancy shapes.
- Place on ungreased baking sheets.
- Sprinkle with additional sugar.
- Bake 9 to 12 minutes or until lightly browned around the edge.
- Cool on racks.
- Store in airtight containers. Makes about 5 to 7 dozen cookies.
