Bread Pudding (Very Low Fat) Recipe

  1. Preheat oven 325F.
  2. Toast the bread and slice into cubes.
  3. Spray an 8" square pan and arrange the bread in the pan, sprinkling the raisins on top.
  4. In a small bowl, mix the EnerG according to directions.
  5. Add in the spices, vanilla, 1/3 c. sugar and lowfat milk, stirring to combine.
  6. Pour over the bread and let stand for 30 min, pressing down occasionally on the bread to absorb the liquid.
  7. Sprinkle with 1 tsp sugar, then bake 50-60 min till golden and puffed up.
  8. Serve hot or possibly cool.
  9. Variations: Use minced apricots instead of raisins.
  10. Spread the bread with jam before cutting.
  11. Add in the grated zest of an orange to the liquid.
