Any Fruit Muffins
- 10 ounces all-purpose flour
- 3 teaspoons baking powder
- 12 teaspoon salt
- 1 34 ounces light brown sugar
- 3 12 ounces white sugar
- 1 cup buttermilk
- 14 cup unsalted butter (melted)
- 14 cup apricot preserves
- Preheat oven to 400 degrees F (205 degrees C).
- Stir together the flour, baking powder, salt and sugars in a large bowl.
- Make a well in the center.
- In a small bowl beat egg.
- Stir in buttermilk and melted butter.
- Add milk mixture to flour mixture.
- Mix gently with a rubber spatula until moistened, but do not beat.
- The batter will be lumpy.
- Spoon one tablespoon of batter into paper lined muffin pan cups.
- Add one teaspoon of jam to each cup.
- Fill cups with remaining batter.
- Bake for 20 minutes, or until golden.
