Braised Fennel With Garlic Butter Recipe

  1. Stir together butter and garlic, and set aside.
  2. Rinse fennel bulbs thoroughly.
  3. Trim and throw away bulb bases.
  4. Trim stalks from bulbs; throw away hard outside stalks, and reserve leaves for another use.
  5. Cut fennel bulbs lengthwise into 1/4-inch-thick slices.
  6. Cook bacon in a round braiser over medium-high heat till crisp; remove bacon, reserving drippings in skillet.
  7. Crumble bacon.
  8. Add in fennel slices to warm drippings in skillet, and cook over medium heat, turning occasionally, about 3 min.
  9. Add in chicken broth and 1/2 c. water; sprinkle with salt and pepper.
  10. Cover, reduce heat, and simmer 20 min or possibly till tender.
  11. Sprinkle with crumbled bacon, and serve with butter mix.
  12. This recipe yields 6 servings.
  13. Comments: Raw fennel in green salads adds texture and taste.
