Carrabba's Mini Cannoli

  1. Using a mixer with a wire whip, mix the ricotta and the powdered sugar on a slow speed, about 2 minutes.
  2. Add vanilla, cinnamon, and chocolatechips.
  3. Continue to mix on slow until well blended, about 20 seconds.
  4. Chill mixture.
  5. Spoon mixture into pastry bag.
  6. Pipe the stuffing into 8 small cannoli shells.
  7. Be sure to fill from end to end.
  8. Place the filled shells on a plate and sprinkle the ends with the chopped pistachios.
  9. Lightly dust the cannolis with powdered sugar.
