Shrimp and Bean Scampi
- 1 c. quick-cooking bulgur
- 2 tbsp. Extra virgin olive oil
- 1 lb. deveined shrimp
- 3 tbsp. fresh lemon juice
- 2 clove garlic
- 1 can white kidney (cannellini) beans
- 10 oz. spinach
- 1/4 c. fresh parsley leaves
- Cook bulgur as label directs.
- Meanwhile, in 5-quart.
- saucepot, heat oil on medium-high.
- Add shrimp, lemon juice, garlic, and 1/4 teaspoon salt.
- Cook 3 to 5 minutes or until shrimp just turn opaque, stirring occasionally.
- To pot, add beans, spinach, and parsley.
- Cook 2 minutes or until spinach wilts, stirring.
- Serve over bulgur.
