Mocha Nut Cookies
- 23 cup all-purpose flour
- 12 teaspoon baking powder
- 18 teaspoon salt
- 12 ounces dark chocolate or 12 ounces semisweet chocolate, coarsely chopped
- 12 cup butter, cut up
- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon instant coffee granules
- 1 teaspoon vanilla extract
- 1 12 cups pecans, coarsely chopped
- 1 12 cups hazelnuts, coarsely chopped
- 1 cup semi-sweet chocolate chips or 1 cup milk chocolate chips
- Preheat the oven to 325 F.
- Prepared baking sheet with parchment paper.
- Mix the flour, baking powder, and salt in a large bowl.
- Melt the chocolate and butter in a double boiler over barely simmering water.
- Beat the eggs and sugar in a large bowl with an electric mixer at high speed until pale and thick.
- Beat in the chocolate mixture, coffee granules, and vanilla.
- Mix the dry ingredients, pecans, hazelnuts, and chocolate chips
- Drop tbs of the dough 3 inches apart onto the cookie sheet.
- Bake until lightly cracked on top 20-25 min.
- Transfer to racks to cool.
