Uncle Tom's Fried Chicken

  1. In a medium size bowl, beat the eggs with the water.
  2. Add enough hot sauce so the egg mixture is bright orange.
  3. In another bowl, combine the flour and pepper.
  4. Season Chicken with house seasoning
  5. Dip chicken in egg mixture
  6. Coat dipped chicken in flour mixture
  7. Heat the oil to 350F in a deep pot.
  8. Do not fill the pot more than 1/2 full with oil.
  9. Fry the chicken in the oil until brown and crisp.
  10. Dark meat takes longer then white meat.
  11. It should take dark meat about 13 to 14 minutes, white meat around 8 to 10 minutes.
