Tex Mex BBQ Wings

  1. Mix rub ingredients and reserve 1 tablespoon for the bbq sauce.
  2. Season wings generously with the rub and refrigerate up to 24 hours.
  3. Set up your grill for Indirect Heat with a drip pan in the middle (add water).
  4. Place wings skin side up on the grill over the drip pan and cook at 350F for about 45 to 60 minutes.
  5. While the wings are cooking make the bbq sauce.
  6. Mix ingredients in a saucepan and gently simmer for about 5 minutes.
  7. (can be made a day or so in advance).
  8. Glazed wings with barbecue sauce.
  9. And cook for about 10 minutes.
  10. Glaze and continue cooking for about another 10 minutes.
  11. Glaze for a 3rd time and cook about 10 more minutes.
  12. Let rest 5 to 10 minutes before serving.
