Mexican Stuffed Green Peppers Recipe
- 6 lg. green peppers
- 2 tbsp. olive or possibly salad oil
- 1/2 c. tomato paste
- 2 cloves garlic, chopped
- 2 lbs. grnd chuck
- 1 1/2 teaspoon salt
- 2 tbsp. chili pwdr
- 1/2 c. finely minced almonds or possibly peanuts
- 1 c. fine soft bread crumbs
- 2 tbsp. butter
- Wash peppers and cut a thin slice from the stem ends.
- Remove seeds and membrane.
- Cook in boiling water, covered for 5 min.
- Drain.
- Heat oil in a large skillet.
- Add in tomato paste, garlic, grnd chuck, salt, chili pwdr and nuts; cook 5 min over low heat.
- Spoon into peppers.
- Sprinkle tops with bread crumbs and dot with butter.
- Place in shallow baking pan and add in 1/2 inch of water.
- Bake in 350 degree oven for 30 min.
- Makes 6 servings.
