Bread Pudding Pancakes Recipe
- 3/4 c. All-purpose flour
- 2 Tbsp. Sugar
- 1 Tbsp. Baking pwdr
- 1/4 tsp Salt
- 7 x White bread slices, cut into 1/2" cubes
- 2 c. Whole lowfat milk
- 2 lrg Large eggs, beaten slightly
- 3 Tbsp. Butter, melted Butter Syrup
- 1/2 tsp Cinnamon
- 1/4 tsp Grnd Nutmeg
- Stir flour, sugar, baking pwdr, cinnamon, nutmeg, and salt in small bowl to blend.
- Place bread in large bowl and add in lowfat milk.
- Let stand till bread is very soft and beginning to fall apart, stirring mix occasionally, about 15 min.
- Add in flour mix to bread mix and blend.
- Fold in Large eggs and 3 Tbsp.
- melted butter.
- Let stand 15 min.
- Preheat oven to 300 F. Heat butter in heavy large skillet over medium heat.
- Drop batter by 1/4 cupfuls into skillet.
- Cook pancakes till bubbles form on surface and bottoms are brown, about 2 min.
- Turn pancakes over; cook till cooked through and brown on bootom, about 2 min longer.
- Transfer to baking sheet.
- Keep hot in oven.
- Repeat with remaining batter, adding more butter to skillet as needed.
- Serve with syrup.
- NOTES : The spices are my additions, made so which these are a little more interesting.
- Dana ate quite a few of these, and she is a very picky eater.
