Blondie's Grandma's Rhubarb Ketchup
- 4 cup diced fresh or frozen rhubarb
- 3 medium onions, chopped
- 1 cup white vinegar
- 1 cup packed brown sugar
- 1 cup sugar
- 1 1/2 to 2 teaspoons salt
- 1 tsp ground cinnamon
- 1 tbsp pickling spice
- 1 can (28 ounces) diced tomatoes, undrained
- In a large saucepan, combine all ingredients.
- Cook for 1 hour or until thickened, making sure to stir it often so it doesn't burn.
- Cool.
- Refrigerate in covered containers.
