Taisen's beef and bean enchiladas

  1. Cook your hamburger with or without onion.
  2. Add in seasonings, pepper, red pepper and a touch of salt if desired.
  3. Chop / dice onion set on a plate or in a bowl
  4. Shred the cheese and put in a bowl or on a plate
  5. Drain and slice the black olives, set in bowl or on a plate
  6. Take half a can of sauce and heat it up on the stove.
  7. Don't boil this.
  8. Just simmer to keep warm.
  9. Pour enchilada sauce on bottom of a casserole dish.
  10. Enough to just coat the bottom.
  11. You can add in some extra onion here if you like or even some pepper and mix it with a spoon
  12. Heat up the refried beans in a pot
  13. Pre heat oven to 350F
  14. Taking one tortilla at a time, place in the pot of sauce.
  15. Cover both sides of it with sauce.
  16. Remove it and put on a plate
  17. Next add, hamburger, beans, onion, olives and cheese.
  18. Roll one side first towards you, then other side away from you.
  19. Make it tight if you can being careful as they will be slippery.
  20. Don't worry about the ends !
  21. Your basically just folding each side over and overlapping them on the bottom.
  22. Careful not to over stuff otherwise they won't close
  23. Place them seam side down in your casserole dish
  24. Continue these one at a time until the dish is full.
  25. Take any remaining sauce and pour over top of them
  26. Add any of the toppings, black olives, onion and anything else you might have on there, then sprinkle more cheese on top
  27. Bake for 20 minutes or until desired and the cheese is nice and melted
  28. Serve with or without sour cream and salsa.
  29. Enjoy !
