BBQ Cheese Straws
- 1 1/2 cup extra sharp cheddar, coarsely grated
- 1 cup unbleached all purpose flour
- 3/4 packages stick unsalted butter, cut into tablespoons
- 1/2 tsp salt
- 1 tsp bbq seasoning mix
- 2 tbsp heavy cream
- Preheat the oven to 350F fahrenheit with the rack in the upper and lower thirds of the oven
- Line two sheet pans with parchment paper and set aside.
- Add the cheese, flour, butter, salt, and barbecue mix to the bowl of the food processor and pulse until the mix resembles a course meal
- Add the cream and pulse until a ball forms.
- On a lightly floured work surface, roll the dough out to 1/4 to 1/8 inches thick.
- Cut the dough with a sharp knife into 1 quarter inch wide strip
- Transfer to the prepared sheet pans leaving space between them and bake until golden brown about 15 minutes
- Flip the pans half way through the cooking time
- Cool completely on the sheet pans
