Roasted Plantains
- 1 large plantain, peeled and cut into chunks
- 2 large carrots, cut into chunks
- 1 medium white onion, sliced or cut into small chunks
- 4 teaspoons olive oil
- salt
- white pepper
- Preheat oven to 450F.
- In a large bowl, combine all the ingredients.
- Transfer them to a pan and bake for 20-25 minutes, or until the plantains are tender.
