Tofu Chocolate Bavarois without Heavy Cream
- 300 grams Tofu
- 2 tbsp Honey
- 20 grams Gelatin powder
- 800 ml Milk
- 1 until you achieve the same sweeteness as 4 tablespoons sugar Artificial sweetener
- 4 tbsp Sweet processed cocoa
- 4 tbsp Unsweetened cocoa
- Soak the gelatin in a small amount of water.
- Mix the tofu and honey together well with a hand mixer.
- Heat up the milk in a saucepan and stir in the ingredients in the order that they appear in the ingredients list.
- Then add the gelatin and dissolve it into the mixture.
- Add the tofu mixture from Step 1 into the pan from Step 2 a little at a time and combine well.
- Then pour the mixture into a mould or container and leave to chill and set in the refrigerator.
- If you would like to use sugar rather than artificial sweeteners, I think that brown sugar tastes best and is one of the healthiest options.
- If you don't have any processed cocoa powder then you can just use 8 tablespoons unsweetened cocoa powder instead for a deliciously rich flavour.
- If you're making this bavarois for children, I've been told that 6 tablespoons cocoa is a better amount for them.
