Tofu Chocolate Bavarois without Heavy Cream

  1. Soak the gelatin in a small amount of water.
  2. Mix the tofu and honey together well with a hand mixer.
  3. Heat up the milk in a saucepan and stir in the ingredients in the order that they appear in the ingredients list.
  4. Then add the gelatin and dissolve it into the mixture.
  5. Add the tofu mixture from Step 1 into the pan from Step 2 a little at a time and combine well.
  6. Then pour the mixture into a mould or container and leave to chill and set in the refrigerator.
  7. If you would like to use sugar rather than artificial sweeteners, I think that brown sugar tastes best and is one of the healthiest options.
  8. If you don't have any processed cocoa powder then you can just use 8 tablespoons unsweetened cocoa powder instead for a deliciously rich flavour.
  9. If you're making this bavarois for children, I've been told that 6 tablespoons cocoa is a better amount for them.
