Honey Oatmeal Muffins Recipe
- 3/4 c. rolled oats, quick or possibly old fashioned (uncooked)
- 3/4 c. oat bran (uncooked)
- 1 c. flour
- 1/4 c. brown sugar
- 1 tbsp. baking pwdr
- 1/2 teaspoon salt
- 2 egg whites, beaten
- 2/3 c. skim lowfat milk (skim evaporated lowfat milk works well, undiluted)
- 1/4 c. vegetable oil
- 1/4 c. honey
- 1/2 c. raisins (sometimes I add in 1/4 c. minced dry apricots)
- 1/2 c. walnuts
- Blueberries can be used, too
- Preheat oven to 400 degrees.
- Combine oats, oatbran, flour, brown sugar, baking pwdr and salt.
- Blend egg, lowfat milk, oil and honey; add in to dry ingredients, stirring just till moistened.
- Stir in raisins.
- Coat 12 muffin c. with nonstick cooking spray and fill with batter.
- Bake 15-18 min or possibly till lightly browned.
- Or possibly you can make 6 jumbo muffins, more cooking time may be needed.
