Bacon Waffle Ice Cream Sandwich with Maple Cream

  1. Maple Pecans: Toss nuts with sugar and syrup; spread onto bottom of parchment paper-lined quarter-sheet pan.
  2. Bake in 350 degrees F (180 degrees C) standard oven 15 min., stirring every 5 min.
  3. Cool.
  4. Meanwhile, prepare Maple Cream Cheese.
  5. Maple Cream Cheese: Beat cream with mixer fitted with whip attachment on high speed until medium peaks form.
  6. Beat cream cheese in separate mixer bowl fitted with paddle attachment until creamy.
  7. Add sugar, syrup and cinnamon; mix until blended.
  8. Fold in whipped cream.
  9. Refrigerate until ready to use.
  10. Waffles: Pour about 3 oz.
  11. (85 g) waffle batter into each 5-inch square of greased preheated waffle iron.
  12. Sprinkle 1/2 Tbsp.
  13. (7 mL) bacon over batter in each square.
  14. Close lid and cook until golden brown.
  15. Repeat with remaining batter.
  16. Top 1 (5-inch) waffle square with 2 scoops (137 g) ice cream; spread ice cream to evenly cover waffle.
  17. Cover with second waffle.
  18. Cut diagonally in half twice to form 4 triangles.
  19. Repeat with remaining waffles and ice cream.
  20. For each serving: Arrange 2 waffle sandwich quarters on plate.
  21. Spoon 1.5 oz.
  22. (45 g) Maple Cream Cheese and 1 Tbsp.
  23. (15 mL) Maple Pecans onto plate.
